Abstract: The objective of this thesis is to explore main factors of people choosing five star hotel restaurants in Beijing. Food and Beverage consumption, shifting from a role of physiological need to out of emotional resort, has already been integrated into the category of culture in the modern society. And this research is conducted in a five star hotel restaurant. Meanwhile, researcher will analyze the main factors according to their importance level. 38 attributes are obtained through literature review and in-depth interviews. A questionnaire survey is conducted to collect primary data. After data analysis, the original 38 factors are reduced into 13 groupings of factors. The findings suggest that the restaurant customers that come to five star hotels have the following characteristics: they are young, with a high salary, most of them receive a college education and they are so called "white collar stratums". Majority of them are company administrative or management supervisors. They are willing to spend some of their salaries for consumption in five star hotel restaurants. Most of the customers would come back if the five star hotel restaurants would lower their price and they would come back within a year. Most of the five star hotel restaurant customers all agree that health, hotel software and hardware, location, convenience and speed, dining experience are top five factors affecting people' s choice in five star hotel restaurants. And others are economic, self-actualization, release pressure, novelty, social recognition, education & culture, and habit are also reasons that influence people choosing five star hotel restaurant. All these factors imply that efforts can be made by hotel managers to attract more customers to five star hotels.
