dcterms.abstract改革开放以来中国旅游和酒店业处于蓬勃向上的快速发展阶段,各类星级从不足千家上升到现在超过一万多,酒店数量和规模成为仅次于美国的全球第二大市场,其中品牌化是取得成功的关键因素之一。而高校创办的既有教学作用又有经营功能的教学酒店,也经历快速发展到目前稳定的状态,但能够满足设置需求而又能生存发展的凤毛麟角。酒店业的蓬勃发展对一线基层岗位的业专人员需求度很大,教学酒店的社会和商业价值因此也充分得到肯定。基于目前教学酒店的运营管理与整个酒店行业水平还有较大的差距,对教学酒店现存的问题和未来发展途径进行深入探讨,是酒店管理和教育两个领域值得深入研究的课题。本研究聚焦酒店品牌、教学酒店的教学和经营、网络课程为代表的创新技术带来的机遇和挑战等主题,采用二手数据、焦点小组、案例分析和德尔菲法四种定性方法对教学酒店的社会和商业价值、教学酒店的经营和教学两大功能关系、与世界一流教学酒店的差距以及品牌各要素对教学酒店教学和经营的影响等主题深入探讨。研究发现和验证了:第一、由于没有理顺教学和经营两者关系而导致目前大部分教学酒店生存和发展举步维艰;第二、酒店品牌可以通过直接推动教学酒店的经营进而间接影响教学,因此未来教学酒店以品牌为基础,教学为主导,通过教学促进经营,经营反哺教学,形成良性发展循环;第三、以品牌新概念为核心,进而协调梳理教学新体系和经营新标准,最后构建了教学酒店的创新模式是教学酒店发展借鉴和遵循的途径;第四、网络课程可以为未来教学酒店的教学和经营提升创造弯道超车的机会,第五、按照创新模式对新建和改造的教学酒店提出具体的实施计划和步骤。对顺职院教学酒店规划、设计和建设的实践观察,能促进形成并发展有关教学酒店的理论和研究,利用网络资源和网络课程能极大影响教学和经营,最终总结出一条有助于教学酒店未来健康发展的道路,为中国酒店教育开拓创新和教学酒店的可持续性发展提供有价值和可操作性的建议。en_US
